Time to start our recipe 

Today I am sharing with you the recipe for chutney, delicious pumpkin curry. You will love this sweet and sour curry because it is so delicious. You are guaranteed to love this recipe whether you eat it with roti, puri, or plain boiled rice.

Now, without further delay, get down to the task of preparing this recipe. I have taken a kilo of pumpkin for this. We will remove the seeds first. Any kind of pumpkin will work, whether it's green or yellow on the outside. Both are suitable for this dish. After removing the seeds, separate the pumpkin and cut it into small pieces.

After that I cut the pumpkin into small pieces and washed them well. They will be put in a pressure cooker by me. This speeds up the fermentation process of the pumpkin. As we are making a chutney curry, add 1.5 cups of water. If you prefer your curry dry, use less water. Add half a teaspoon of turmeric powder along with salt. Give everything a good stir, then set the pressure cooker for two whistles. When finished, carefully open the lid and let the steam escape. You will see that the pumpkin is cooked.

We are going to cook a chutney curry, so there will be some water. If you want a dry curry, use less water in the same recipe. Add half a teaspoon of fenugreek seeds, one teaspoon of fennel and one teaspoon of cumin seeds in a pan (about three tablespoons). After frying them lightly, add one medium-sized finely chopped onion and 1/4 teaspoon of asafoetida. Add onion and fry until light brown.

A few curry leaves can also be added if desired. Saute the onions until they turn light brown. At this time add a teaspoon of ginger garlic paste and mix well.

Now I add half of a medium sized, well ripe tomato that has been roughly chopped. It gives a beautiful color to the veggie and improves its taste. Making sure our curry tastes good and looks appealing. You can see that the tomatoes have softened after the onions have browned. Mash the tomatoes well using a spoon or ladle. This is what our Masala is built around. Now we are going to add dry spices to our main spice.

Before this add two to three whole dry red chillies and mix it. You can also use green chilies if you like. On my part, I enjoy the flavor of dry red chilies in this dish. Add 1.5 teaspoon red chili powder and 1.5 teaspoon coriander powder from Kashmir. Mix the spices well. Since we used to use turmeric while cooking pumpkin, I am not using it anymore. Now we will roast the spices along with the pumpkin for good taste.

Cook the spices until their fragrance fills the air and they are roasted well. After the spices are roasted well, I have added half a spoon of dry mango powder. Amchur adds sweetness and tang to food. Now we are going to add jaggery. Although sugar is also an option, I personally use jaggery. Add jaggery, two or three tablespoons of ghee to it. You can cut back on the chili powder if you want it less hot, but the acidic sweetness of this dish really brings out the flavor. Try adding jaggery and see the result. Cook the spices until the jaggery dissolves completely.

Next, add the cooked pumpkin that was kept aside and mix well. Cook over medium heat, stirring constantly, until desired consistency is achieved. Remember to save some gravy. Boil it for a while, it will thicken naturally. I cooked it on medium heat for about 6 minutes so I could get the consistency.

Finally add half a teaspoon of garam masala powder and finely chopped fresh coriander and stir. Stir well and heat for an additional minute. After that turn off the flame and let it sit for some time. The curry will look a lot better and thicken a bit more, as you will see. Add some finely chopped fresh coriander as a garnish and serve hot with puris or parathas.
